Chris Haisma opened Wicker Park’s Clever Rabbit in 2017 and also co-owns Betty and Sparrow. Haisma has expanded his culinary skills into the art of veggie-focused dishes to appeal to the growing ‘clean-eating’ trend amongst Chicagoans. Haisma spent his twenties in the Los Angeles restaurant business, but returned to Chicago after joining Boka restaurant group. After signing on as the opening general manager at G.T. Fish & Oyster, Haisma was promoted to Director of Operations and opened The J. Parker late July 2012. In 2013, Haisma was overseeing Boka in addition to those two ventures.
